"Not Quite Kedgeree"


Recipe: Kyle's Cabin original - of course.

This really does take less than 10 minutes and one pan. I just did it.

Melt 2 tablespoons butter in a saucepan.
Place one piece Costco - wild frozen salmon in pan.
Add 4 tablespoons water - cover and simmer
Add one small can, mostly drained mushrooms
Add one can mostly drained sliced water chestnuts
Add one tablespoon diced garlic
Add 2 cups fresh "English peas" ( grown in South America - now at Costco )
Cover for 5 minutes
Add 2 cups precooked white basmati rice
Cover for 2 minutes - stir to break salmon into chunks.

Serve. Honestly, don't you think Costco should give me a discount on my next purchase?

Starlight Beet and Banana Muffins

Starlight Beet and Banana Muffins


STEP ONE - Mix well and leave at room temperature overnight:

3 cups whole wheat flour

2 cups sour raw milk


STEP TWO

In a second bowl - Mix the following together well ( can do by hand )

Half cup butter ( one cube )

Half to one cup rapadura sugar ( start sweeter if you're not used to w/w flour )

4 eggs

2 t. baking soda

1 t. iodized salt

3 ripe bananas

1 Tbs. vanilla

STEP THREE

Add the second mixture to the flour and milk

add:

3 cups grated beets, squeezed dry ( can use beet pulp from juicing adding back a teeny bit of beet juice )

Mix together well. Depending on how dry the flour is you may need to adjust. If too thick, add a bit more milk, if too thin, add flour a tablespoon at a time. It takes awhile for the flour to absorb the liquid so take your time before placing into muffin pans.

Bake at 375 F for 30-40 minutes
